Tempting Vegetarian Casserole

Ingredients
  

  • 1 cup white quinoa
  • 2 cups broccoli florets
  • 1 medium butternut squash (peeled and cubed)
  • 2 sliced bell peppers (your choice)
  • 4 sliced carrots (medium size)
  • 1 chopped onion (large)
  • 2 cups shredded cheese (your choice)
  • 2 tbsp olive oil
  • 1/4 cup chopped parsley

Method
 

  1. Cook quinoa: Rinse 1 cup quinoa and cook per package instructions in water or vegetable broth until tender.
  2. Roast veggies: Toss broccoli, butternut squash, bell peppers, and carrots with 2 tbsp olive oil. Roast at 375°F/190°C for 30 minutes, until tender.
  3. Sauté onion: In a medium pan, sauté the onions 5–7 minutes until softened.
  4. Combine: In a large bowl, mix cooked quinoa, roasted veggies, and sautéed onions.
  5. Transfer mix to a baking dish, sprinkle 2 cups of shredded cheese and 1/4 cup of chopped parsley over the top.
  6. Bake at 375°F/190°C for 25–30 minutes, until hot and the top is golden and bubbly.
