Ingredients
  

  • 1/2 cup strong hot coffee or hot water
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup neutral oil (avocado, grapeseed, or vegetable)
  • 1/4 cup unsweetened creamy almond butter or sunflower seed butter
  • 1 tsp vanilla extract
  • 3 ounces dairy-free dark chocolate
  • 3/4 cup Dutch-process cocoa powder
  • 3/4 cup all-purpose flour
  • 1/2 tsp fine sea salt
  • 1/2 tsp baking powder
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 pinch flaky sea salt for topping (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch metal pan with parchment paper.
  2. In a large bowl, whisk together hot coffee, granulated sugar, and brown sugar until glossy.
  3. Add melted dark chocolate, then whisk in oil, almond butter, and vanilla until smooth.
  4. Sift in cocoa powder, flour, salt, and baking powder. Fold just until combined, batter should be thick and shiny.
  5. Optional: Fold in nuts or extra chocolate chips. Spread batter evenly in the prepared pan.
  6. Bake 23–27 minutes, until edges set and center slightly jiggles.
  7. Cool in the pan for 1 hour, then chill 30 minutes before slicing into 16 brownies.
