Satisfying Vegetarian Breakfast Burrito

Ingredients
  

  • 2 whole eggs (scrambled)
  • 1 cup frozen corn (thawed)
  • 1 cup diced bell pepper's (any color)
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 1 cup cooked rice
  • 1 cup shredded cheese (your choice)
  • 1/2 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • 4 large tortillas (flour or whole wheat)

Method
 

  1. Sauté vegetables: Heat 2 tbsp olive oil in a pan over medium heat. Add bell peppers, onions, corn, and garlic, cook 5 minutes until tender.
  2. Cook rice: Bring 1 cup water to a boil in a small pot. Stir in 1 cup instant rice, cover, remove from heat, and let stand for 10 minutes.
  3. Scramble eggs: In a separate pan, scramble 2 eggs until set, for 5–7 minutes.
  4. Assemble burritos: Warm tortillas (20–30 seconds in microwave). Layer rice, sautéed vegetables, scrambled eggs, and cheese on each.
  5. Fold and serve: Fold the bottom of the tortilla over the filling, then fold in the sides and roll tightly. Serve hot, garnished with cilantro.
